Mini Pineapple Upside-Down Cake

This recipe has been completely reworked from its original posting.

muffin tins or 4 individual 4 ounce ramekins, greased well
1 can pineapple slices, chunks, or bits (drained, the liquid reserved)

Preheat oven to 375°F

Topping
4 teaspoons butter, divided
4 teaspoons brown sugar, divided
4 pineapple slices

Place butter and sugar in each cup and melt in preheating oven
when completely melted, mix well
add pineapple slices

Cake
1 egg
1/2 teaspoon vanilla
1/4 cup reserved pineapple liquid (if there isn’t enough add some milk)
1/2 cup AP flour
1/3 cup sugar
1/8 teaspoon baking soda
pinch of salt

Mix all the ingredients together
place 1/4 cup of batter in each cup

Bake for 20-25 minutes, or until a toothpick comes out clean

You’ll note the traditional cherry is missing from the center of the pineapple slice. It’s a personal preference, I hate maraschino cherries.
