Basic Chocolate Cake

chocolate cake

1 stick butter
1 1/2 cups sugar
3 eggs
1 1/2 teaspoons vanilla
3 squares (3 ounces) unsweetened chocolate, melted and cooled Edit: Dark sweetened chocolate can be substituted, just reduce the sugar to just over 1 cup
2 cups flour
2 teaspoons baking soda
1 cup sour cream or yogurt
1 cup boiling water
pinch of salt

Preheat oven to 350°F

Grease and flour pans and set aside
(1 tube pan, 2  9″-inch rounds, or 3 small loaf pans)

Mix dry ingredients together and set aside

Cream butter and sugar
Add eggs and beat until light and fluffy
Add vanilla and chocolate
Add dry ingredients to butter mixture, alternately with sour cream
Mix well after each addition
Stir in boiling water (batter will be thin)

Pour into prepared pans

Bake for 35 minutes, or until a toothpick comes out clean

Cool in the pan for 10 minutes, then turn out onto rack and cool completely
