Buttermilk Biscuits

A somewhat lighter version

2 cups AP flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons plus 1 teaspoon chilled butter, margarine and/or shortening
3/4 cup buttermilk

Preheat oven to 450°F

Combine flour, baking powder, baking soda, and salt. Cut in fat until the mixture looks like coarse meal (I use a food processor)
Add buttermilk and stir until moist
Turn dough onto floured surface and knead lightly 4 or 5 times
Roll dough to about 1/2 inch thickness and cut out biscuits with 2 1/2 inch cutter
Bake 12 to 15 minutes or until golden

I’ve exchanged 1 cup whole wheat flour for 1 cup AP flour. A little less tender, but just a bit healthier.

And instead of cutting the biscuits out with a floured cutter, I’ve gotten into the habit of patting the dough into a square that’s a 1/2 inch thick (more or less), and cutting into nine even biscuits. Separate slightly for baking. No waste!
