Couscous with Dried Fruit and Nuts

1/2 cup dry couscous
1/3 chicken stock (for vegetarians, vegetable stock, or well seasoned water)
1/2 small onion, chopped
1 clove garlic
1 tablespoon dried cranberries (chopped is optional)
1 tablespoon raisins (chopped is optional)
1 tablespoon sliced or slivered almonds
salt and pepper

Saute onions and garlic until transparent
add any combination of dried fruit and nuts
add liquid and bring to a boil
add couscous
stir well, turn off heat, and cover pan

after 5 minutes uncover, add salt and pepper to taste,  fluff with a fork, and serve

Lemon Curd – A small batch

lemon curd

1/2 cup sugar
2 large eggs
1/2 cup lemon juice
2 tablespoons butter

Combine sugar and eggs in a sauce pan over medium heat with a whisk
cook until sugar dissolves and mixture is light in color (about 3 minutes)
stir in lemon juice and butter
cook for 5 minutes, stirring constantly (I recommend a silicon covered whisk, or wooden spoon, to avoid discoloring the curd)
chill and serve

Makes about 1 cup
