Shredded Pork

1 tablespoon oil
1 large onion, sliced
4 cloves garlic, smashed
3 pounds pork (ribs or shoulder)
1 28 oz. can diced tomatoes
1 8 oz. can tomato sauce
8 oz. water
1 bay leaf
red pepper to taste (or 1 chipotle chili in adobo)
salt and pepper to taste

If the meat came with skin, remove it. The bones can be removed after cooking

In a large heavy pot heat oil
add onion, garlic and spices
cook until soft
add bay leaf
tomatoes, sauce and water
add meat
bring to a boil, lower heat and simmer for 2 to 2 1/2 hours
(you can shorten the time by 1/2 by using a pressure cooker)

cool until you can pull the meat off the bone with your fingers, finding the bay leaf, bones and grizzle and discard.

serve on rolls or in tortillas with cole slaw
