Cardamom Coffee Cake

cardamom
1 3/4 cups flour
1 teaspoon baking soda
3/4 cup sugar
1 stick (1/2 cup) unsalted butter, softened
2 eggs
2 teaspoons ground cardamom
1/2 teaspoon ground cinnamon
1/2 cup sour cream or yogurt

Preheat oven to 350°
grease a loaf pan and set aside

Combine flour, baking soda, and spices in a small bowl and set aside

Cream sugar and butter, beat with an electric mixer until light and fluffy
add eggs, one at a time, beating after each addition
beat in flour mixture, until just combined
add sour cream and mix until smooth
pour batter into prepared pan and smooth

Bake about 50-60 minutes, or until a toothpick inserted comes out clean
let stand 5 minutes on cooling rack, then turn out onto a wire rack and cool

For a small batch, use mini loaf pans (makes 3 as shown) click for baking times

Freezes well
