Buttermilk Pancakes – a small batch

pancakes

1 cup flour (1/2 cup of whole wheat flour can be exchanged)
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon soda
1 tablespoon oil
1 egg
1 cup buttermilk (or sour milk)
pinch of salt

Mix it all together
spoon into hot pan with a 1/4 cup measure to form pancakes
cook 2 to 3 minutes on each side

Makes 9 pancakes

    These were the best pancakes I have ever made! Light and fluffy even though I used 50/50 all-purpose and white whole wheat flour. My search for a pancake recipe is over.
