Shepherds Pie – A small batch

3 – 4 cups mashed potatoes (leftovers are perfect)
1/2 pound ground meat (any kind)
1 small onion, chopped
1 rib celery, chopped
1 carrot, chopped
1 clove garlic, minced
bread crumbs
1 tablespoon butter
salt and pepper

Preheat oven to 375°

Sauté vegetables in a little bit of oil
add meat to pan, season to taste, and cook until browned and set aside

Put half the potatoes at the bottom of a small baking dish, I use a large loaf pan
then add the layer of cooked meat and veggies
then the rest of the potatoes
top with a sprinkling of bread crumbs and small pads of butter
bake for 20 minutes to warm completely through and top is golden brown

Serve with gravy on the side if you like
