Molten Chocolate Lava Cakes

4 tablespoons unsalted butter, room temperature
3 eggs
1/4 cup sugar
4 ounces bittersweet chocolate, melted
(3 tablespoons chocolate chips equal 1 ounce)
1/4 cup flour
pinch of salt
cocoa and oil spray for greasing and dusting the ramekins

Preheat oven to 400°

Grease and dust four 4 ounce ramekins with spray and cocoa generously and set aside

Cream butter and sugar until light and fluffy
add eggs one at a time
add flour and salt
add chocolate
mix well and fill ramekins

Bake 10-12 minutes until cakes are just set
remove from oven and let stand for 5 minutes
turn cakes out of ramekins and serve

Cake shown was baked in a toaster oven and turned out perfectly.

I read somewhere that restaurant chefs make these in advance, freeze them, and cook off individually as needed.

[Edit] It worked! Straight out of the freezer and into the oven. I baked for 12 minutes and let it rest for the necessary 5 minutes and it was as good as fresh.

Coconut Macaroons – A small batch

1 large egg white
1 tablespoon sugar
1/4 teaspoon vanilla
3/4 cup sweetened flaked coconut
pinch of salt

Preheat oven to 300°F

Whip egg white, sugar, and vanilla to stiff peaks
fold in coconut

Place formed cookies onto a parchment-lined or greased sheet
bake for 15-20 minutes or until tops are golden brown

Makes 6 cookies

Kheer – A small batch


aka Indian rice pudding

3 cups milk
2-3 tablespoons sugar
1/4 cup rice, uncooked
1 teaspoon ground cardamom
garnish with raisins and nuts

In a blender or food processor, pulverize the uncooked rice to break up the grains

Bring milk, sugar, and cardamom to a boil, then reduce and simmer over a low heat, stirring to prevent scorching

Add rice to milk and cook, covered, for approximately 40-50 minutes, or until the pudding is the preferred creamy consistency.

Serve chilled or at room temperature

Applesauce Raisin Muffins – A small batch

1/4 cup AP flour
1/4 cup whole wheat flour
1/4 cup rolled oats
pinch of salt
3 tablespoons brown sugar
2 tablespoons raisins
1/4 applesauce
2 tablespoons oil
1 egg
1/4 teaspoon vanilla
1/4 teaspoon cinnamon and 1 tablespoon white sugar, combined

Preheat oven to 400°

In one bowl combine flours, oats, brown sugar, and salt

In another bowl combine applesauce, oil, egg, raisins, and vanilla

Add wet ingredients to dry ingredients, mix until just combined
spoon batter into standard sized muffin tins
sprinkle tops with cinnamon sugar
fill the empty muffin tins half way with water to avoid scorching

Makes 4 muffins

Bake 18-20 minutes
