Peel & Eat Shrimp

1 pound uncooked shrimp, with shells
1 quart water
10 peppercorns, approximately
juice of 1 lemon or lime, throw in the spent fruit as well
1 clove garlic, smashed
1 inch fresh ginger, sliced
1 tablespoon coriander seeds
chili (if you like some spice)

Bring water and seasonings to a rolling boil in a covered pot
turn off flame
add shrimp
cover pot and let stand OFF heat for 10 minutes

Drain, discard seasonings, cool, and serve with your favorite condiment
