Kimchi Bokkeumbap – A small batch

aka Kimchi Fried Rice

1/2 cup rice, cooked and left-over
1/4 cup kimchi, diced
1/4 cup ham, diced
1/2 teaspoon sesame oil
1 teaspoon soy sauce
1 egg, fried
1/4 cup vegetable, diced (optional)
oil for sautéing

Fry egg, sunny side up, and set aside
sauté ham until somewhat browned
push ham to one side and add the kimchi, heat through
add the rice and mix thoroughly
add sesame oil and soy sauce

Add diced veggies if you want, I do.

For a vegetarian version confirm the kimchi is free of fish product, omit egg and ham, and replace the ham with firm diced tofu.
