Classic Bolognese Sauce

1  15 ounce can tomato sauce
2 tablespoons tomato paste
1 cup chicken or beef stock (or water)
1 pound ground meat (beef or combination of beef, pork, and/or veal)
1/4 cup dry wine
1/4 cup milk or cream
1 onion, diced
1 clove garlic, minced
1 carrot, diced
1 rib celery, diced
oil for sautéing
salt and pepper

Sauté onions, celery, carrot, and garlic
when softened add meat
cook meat until no longer pink and liquid has evaporated
add tomato sauce, tomato paste, stock, and wine
combine well and simmer for 30-45 minutes
stir in milk and cook for another 15 minutes
salt and pepper to taste
