Chicken and Dumplings – A small batch

Stew
2 cups (approx) chicken, cooked and cubed or shredded
1 small onion, diced
1 rib celery, diced
1 carrot, diced
1 clove garlic, grated
1 tablespoon oil or butter
1 tablespoon flour
1 cup chicken stock
salt and pepper

Dumplings
Use your favorite drop-style biscuit recipe. I use the biscuit recipe from my homemade ‘bisquick’ mix  I keep in the freezer, but add a bit more water to get the right consistency for drop biscuits.

Heat oil in small Dutch oven
sauté onion, garlic, celery, and carrot until they are translucent and begin to get tender
sprinkle in the flour, stir and cook for about a minute
add stock, mix well
add chicken, mix well
cook until simmering
season to taste

Using a tablespoon, scoop some of the biscuit dough, and drop on top of bubbling chicken stew
Cover and simmer for 8 to 10 minutes
