Beef Stroganoff – A small batch

1 tablespoon butter
2 tablespoons oil, divided
1/2 pound of top sirloin, sliced thinly
1/2 onion, chopped
4 ounces mushrooms, sliced (I like mushrooms, so I used 8 ounces)
1/2 cup sour cream (yogurt will not work here)
splash of wine or water, if you have it

In a large sauté pan, heat 1 tablespoon butter and 1 tablespoon oil over high heat
add beef, browning quickly and well
salt and pepper to taste
remove from pan and set aside

In the same dirty pan, brown onions
when done, remove from pan, and set aside

Heat 1 tablespoon more of oil in the same pan
add mushrooms and brown well

Reduce heat to low
add sour cream
stir in beef and onions
add wine or water to loosen sauce

Heat through, do not bring to boil
salt and pepper to taste
serve over cooked egg noodles, rice, or boiled potatoes

    A friend asked whether turkey or chicken could be used to replace the beef. Why not? I found more than a few recipes online that did just that.
