Hamburger Rolls

hamburger rolls

I use this recipe from King Arthur Flour, with only minor changes listed here. The resulting dough is smooth and easy to handle.

3/4 to 1 cup lukewarm water
1 tablespoon butter
1 tablespoon oil
1 egg
3 1/2 cups flour
scant 1/4 cup sugar
1 1/4 teaspoons salt
1 tablespoon instant yeast

Mix all these ingredients together, until it makes a cohesive dough
(a stand up mixer does a great job with this part)
knead for about 10 minutes by hand
let rise in a closed container until doubled in bulk, 1 to 2 hours
divide into 8, 10, or 12 even pieces (it all depends on the size roll you want)

Shape into small balls
place on a cookie sheet
flatten dough with the palm of your hand
let rise, covered for another hour

Bake in a 375° F oven for 15-18 minutes
reduce time for smaller rolls
