Kung Pao Chicken – A small batch

1 chicken breasts, boneless and skinless, cut into 1/2 inch cubes
1 cup broccoli florets
1 teaspoon crushed red pepper flakes
1/3 cup peanuts
1 clove garlic, minced
oil for sauteing

Marinade:
1 teaspoon soy sauce
1 teaspoon rice wine or rice vinegar
1 teaspoon sesame oil
1 teaspoon cornstarch

Sauce:
2 tablespoons soy sauce
1 tablespoon rice wine or rice vinegar
1 teaspoon sugar
1 teaspoon sesame oil

Combine cubed chicken with the marinade
marinate for about 30 minutes

Prepare the sauce and set aside

Heat the pan over high heat
add 1 tablespoon oil
when the oil is hot, add the chicken and stir-fry until it begins to brown
remove from pan and set aside

Heat an additional tablespoon of oil in the dirty pan
add the garlic and stir-fry until aromatic (about 30 seconds)
add chili flakes
add the sauce to the pan and bring to a boil
add the chicken back into the pan
add the broccoli and peanuts
combine, coating chicken well with sauce (I needed to add a splash of water to loosen up the sauce)

Makes 2 servings = 8 carbs each

Colcannon – A small batch

colcannon

Colcannon is a traditional Irish dish made from mashed potatoes and cooked greens.

2 cups mashed potatoes (left over or freshly made)
4 cups hearty greens (kale or cabbage) chopped
1 onion, chopped (leeks or green onions are tasty too)
1 clove garlic, minced
1 tablespoon butter (vegans will wish to omit the butter)
1 tablespoon oil
salt and pepper

Sauté onion and garlic until translucent
add chopped greens, sprinkle with salt and mix well
cover to allow greens to wilt down well
add mashed potatoes and mix until well combined
season to taste

Chocolate Krinkles – A small batch

1/4 cup oil
2 ounces unsweetened chocolate, melted
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
pinch of salt
powdered sugar for dusting

Mix oil, chocolate, sugar, eggs, and vanilla, set aside

Mix flour, baking powder, and salt

Pour liquid mixture into dry mixture and mix until well combined
chill for several hours

Form dough into balls
dust well with powdered sugar
place on greased cookie sheets, approximate 2 inches apart

Bake at 350°F for 10-12 minutes
let cool completely on cookie sheets
