Simple Fruit Tart for One or Two

Years ago I watched an episode of Jacques Pepin’s Fast Food My Way where he used a flour tortilla as a base for a fruit tart and never gave it a second thought. Fast forward to last week when I bought and tried a new brand of flour tortilla and this fruit tart recipe came back to me in a flash. Simple, fast, and damn tasty.

2 small flour tortillas (or one large)
fruit, sliced thin (can’t really give a measurement since all fruits are different)
1 tablespoon butter, room temperature
1 tablespoon white sugar
2 tablespoons apricot preserve, warmed with a splash of water

Preheat oven to 425°F

Spread 1/2 tablespoon of butter on each tortilla
sprinkle with 1/2 tablespoon of butter
place tortilla on parchment lined cookie sheet, butter/sugar side down

Arrange fruit on tortillas, half on each
sprinkle with remaining sugar
dot with remaining butter

Bake 20 to 30 minutes, until tortilla is brown and crisp

Using a pastry brush, spread preserves over hot tarts

Let cool a bit before serving
