Strawberry Galette

What’s not to love about strawberries… well, unless you’re allergic, then yeah, not so much.

I happen to be living in a strawberry region and loving it! I’m taking full advantage of the copious amounts of fresh, ripe, and reasonably priced berries.

1 pie crust (I admit to using store-bought *hangs head in shame*)
1 quart strawberries, hulled and quartered
1/3 to 1/2 cup sugar, plus extra for sanding the crust just before baking
3 tablespoons starch (tapioca, corn, or potato)
2 tablespoons strawberry or apricot jam
1 egg, beaten

Preheat oven to 425°F

In a bowl, whisk together sugar and starch
add the berries and toss to coat with the dry mixture

Line a sheet pan with parchment
place the rolled out dough sheet on top
pile the strawberry mixture in the center, leaving a border of dough
fold the overhang back up around the fruit, encasing it on all sides
folding and crimp into rustic pleats to gather up the excess
chill the galette in the fridge for 30 minutes

Remove the galette from the fridge
brush the dough with egg wash and sprinkle with sugar
place the in the oven and bake for 20 minutes
reduce the temp to 350°F
rotate galette and bake for 20 additional minutes
the crust should be golden brown and the filling is bubbling all over

Remove from the oven
microwave the jam for 30 seconds
brush over the berries
allow the galette to cool completely before serving

I’m seriously considering gilding this lily by drizzling it with melted chocolate.
