Spanish Tortilla for One or Two

Potato, bacon, and onion tortilla

Potato, bacon & onion tortilla

aka Frittata

These two dishes are kind of like a crustless quiche, without the milk or cream, and cooked on the stove top.

2 or 3 eggs, beaten
1 cup of filling (potato, cheese, meat, herbs, veggies)
salt and pepper
butter or oil for sautéing

Heat a lightly greased skillet until hot
toss in filling, heat through or cook through if necessary
add beaten eggs
season with salt and pepper
cook until bottom of egg is set
flip to cook the top (use the plate method if you don’t feel comfortable flipping free-hand)

Cheaters Sangria – A small batch

1 cup dry wine, red or white
1/2 cup fruit juice
1/2 cup sliced assorted fruit
a squeeze of lemon

Mix well, let rest in refrigerator, and serve over ice.
Or, serve immediately if you’re so inclined.

Gazpacho – A small batch

2 cups fresh ripe tomatoes, chopped
1/2 cucumber, peeled, seeded and chopped
1/2 onion, chopped
1 rib celery, chopped
1/2 bell pepper, seeded, deveined, and chopped
2 garlic cloves
1 tablespoon vinegar
1 tablespoon lemon juice or lime juice
1 tablespoon olive oil
dash of Tabasco, squirt of Siracha, or a sprinkling of cayenne
salt and pepper
water

Puree all ingredients in a blender to desired texture
add water if necessary
season to taste

Serve chilled with any garnish you choose

All measurements are approximate
