Curried Salad Dressing with Egg

1 clove garlic, minced
1 teaspoon Dijon mustard
1 teaspoon prepared curry powder
1 tablespoon mayonnaise
squirt of lemon juice
2-3 tablespoons water, approximately (depends on how thick you like your dressings)
1 soup spoon sour cream, yogurt, or crème fraiche
1 hard-cooked yolk, smashed
salt & pepper to taste

I put all ingredients into a jar and shake well. Let rest and chill for a minimum of an hour, to allow the curry to fully bloom.

The picture shows it served over a salad of sliced steak, steamed cauliflower, mesclun greens, avocado, tomato, and beets.

It makes a great dip for crudités when served thick.

Thai Red Curry – A small batch

red curry

8 ounces protein, sliced into strips (any protein will work, even tofu)
1 cup veggies, cut up
1  5.6 ounce can coconut milk
1 teaspoon prepared red curry paste (found at your local supermarket)
1 teaspoon brown sugar
1 teaspoon fish sauce
1 teaspoon basil
oil for sauteing

Heat cooking oil in a pan
add curry paste and fry in oil for a minute or so
lower the heat and add just the cream of the coconut milk
reserve the water
stir until the paste is mostly dissolved and the coconut cream has cooked down a bit
add the coconut water
add sugar and fish sauce
add the protein
then add the veggies and basil
simmer for approximate 5 to 8 minutes

Makes 1 serving = 10 carbs

Curried Chicken Salad


1 chicken breast, cooked and cut into pieces (approx. 1 ½ cups)
1 rib celery, chopped
1/4 cup dried fruit, chopped (currants, raisins, golden or otherwise, cranberries, apricots)
2-3 soup spoons mayonnaise (or to taste)
1/2 teaspoon curry powder (or to taste)
salt and pepper

Mix all ingredients together and refrigerate for at least one hour before serving, to allow the curry powder bloom.

This recipe makes enough for two sandwiches
