Basque Burnt-Top Cheesecake

16 ounces cream cheese
8 ounces heavy cream
3 eggs + 2 egg yolks, mixed well
1/2 cup sugar
the juice of one lemon
All ingredients should be room temperature
Preheat oven to 450°F
Line a loaf pan with parchment paper
Soften the cream cheese with a mixer or by hand
add sugar and combine until sugar granules melt
add the eggs slowly three separate times, each addition after batter is smooth
add lemon juice
add heavy cream and mix until completely combined
Pour batter into prepared pan
tap the pan on the counter top to remove any air bubbles
Bake for 20 – 25 minutes
Allow to cool in the pan, on a wire rack until room temperature
then chill in the fridge for 12 hours minimum
Remove the parchment paper carefully
