Three Ingredient Cookies – A small batch

aka Sablé, shortbread, or sugar cookies
1/2 cup room-temperature butter (1 stick)
1/4 cup brown sugar
3 tablespoons white sugar for coating
1 cup AP flour
1/2 teaspoon vanilla
pinch of salt
sprinkles optional
Preheat oven to 325°F
Using a hand or stand mixer, beat together the butter and sugar for about 2 minutes
next up add in the flour and mix together
Wrap the dough in plastic, shape dough into a squarish disk, and let it chill in the fridge for a minimum of 30 minutes
Cut the dough into approximately 1” squares, checkerboard fashion
roll the squares into balls
coat each ball with white sugar
transfer to a lined baking sheets 2 inches apart
Using a flat-bottom glass, press down on the balls to flatten
sprinkle with some sprinkles (if using) and lightly press down again just so they stick
the dough should be about 1/4″ – 1/8″ thick.
Bake for 12 -13 minutes or until the edges are golden brown
Remove pans from oven and allow the cookies to cool completely on the pan
Makes approximately 24 small cookies
